Fresh Fig & Walnut Bread



***Don't you just love figs? Some friends of ours have several fig trees, and they were gracious enough to give us 2 big bundles of them. The challenge was...what to make with all those figs??? I came across this recipe for fig bread. Honestly, I had no idea that fig bread even existed until recently. It sounded like it would be a little like banana nut bread...and I love banana nut bread! The original recipe called for pecans instead of walnuts. In my opinion, the walnuts turned out even better. I use pecans frequently, so this was a nice change. The bread was incredibly moist and delicious...this is definitely a must-try!!! The figs lend a wonderful, mild taste to the bread (which isn't particularly figgy...is that a word? lol), and the buttermilk adds a nice richness. It makes a perfect breakfast when paired with a steaming cup of coffee. Stay tuned to see what else I created with these figs...it will be a savory dish!***


Ingredients:
3 eggs
2 ½ cups sugar
2 cups ripe figs, peeled and mashed
3/4 cup vegetable oil
3 cups flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 cup buttermilk
1 cup chopped pecans (I used walnuts!)

Directions:
Beat eggs; add sugar and beat well. Add the mashed figs and vegetable oil.

Sift together flour, soda, salt and cinnamon. Add the fig mixture alternately with the buttermilk. Beat well.

Fold in chopped pecans. Bake at 350 degrees for 1 hour in greased and floured loaf pans.

Makes 2 large or 3 small loaves.

I LOOOOVE figs! My dad has a fig tree and I can't WAIT for it to go crazy. If I don't eat them all in an excited craze, I starred this recipe to use. It looks wonderful!! :)

Is it 2 cups after peeling n mashing which I assume it is or before peeling n mashing thanks

I just made this bread. I used 9x13 pan and replaced oil with Apple sauce. This bread is amazing, I highly recommended.

Made a loaf of this today and my family LOVED it! So, I went out to my fig tree for a quick harvest, then proceeded to make 6 more loaves! Figs go bad so fast, and my tree gives me 2-4 cups of fresh figs a day at this time of year. This is a great recipe to make great use out of these fresh figs! I'm sharing with excited friends & family tomorrow... "You get a loaf! You get a loaf! You get a loaf!" I'll be like the Oprah of fig bread! Lol! Thanks so much for the great recipe!

Just made this and it's wonderful!!! I have an overabundance of figs from two very old fig trees in my yard and we don't eat a lot of preserves or jelly so this is perfect!!! Makes a great breakfast bread with a cup of coffee or it's wonderful to give out as gifts! My sister an I decided we like it much more than banana bread as the figs aren't as overpowering a flavor as bananas! Thanks for a great recipe! :)

Great recipe! I made a few changes due to ingredients I had on hand and it was still delicious. I did not peel the figs, I used 1 tsp cinnamon instead of a half, I used evaporated milk with 1/4 stick of butter, and only 1/2 cup of oil.

I made this bread and my 90 year old mom loved it! I was worried that I did something wrong because it sunk in the middle while still in the oven. But, it was perfectly cooked, moist and delicious. I did not peel figs. Any thoughts?

This is a great recipe! I made two loaves today. I had a counter full of figs this morning with a still loaded tree. I have been eating figs as fast as I could. So, I found this recipe on Pinterest and decided to give it a try. It was wonderful! I did make two changes I reduced the sugar to 1 1/2 cups, the bread was still plenty sweet enough. Probably will reduce to 1 1/4 next time I make it. I also used a whole teaspoon of Cinnamon instead of half. My husband who is a banana bread aficionado says this beat any banana bread he has ever eaten.

I loved the taste but my bread came out too moist and I was having a hard time cutting it, should I add a little bit more flour to make it more firm?

Subbed apple sauce to make up for not having enough figs. Added more cinnamon along with nutmeg and allspice.
Think the batter turned out too wet. Middle of my loaves sunk pretty seriously.
Flavor turned out nice and I'd love to try again with a half batch and more flour.

I made this so many times with figs, so when figs ran out I made it with bananas and walnuts. Oh so good.

Absolutely Sinful Cinnamon Rolls

***Alrighty, here are the cinnamon rolls that I mentioned in my previous post. I put these together on Christmas Eve, and then baked them on Christmas morning. My Favorite Quiche!

***It's not often that a recipe is worthy of re-posting.  I think I've only done that once or twice in the entire time I've written this blog.  However, this is one of those rare occasions.  Back in 2009 when Brad and I went to Europe, we had the most amazing Quiche Lorraine at the incredible Les Deux Magots cafe in Paris.  It was delicious and was served alongside a yummy salad of fresh greens (Quiche Lorraine sur Salade Verte).  Oh, it was heaven on a plate!  It also didn't hurt that we were sitting on the patio of one of the most famous cafes in Paris, after all...haha.  The atmosphere and people-watching in that particular area are hard to beat. I'll never forget the elderly lady that was sitting at the table right next to us (the tables were situated pretty close together).  She was dressed to-the-nines, was all by herself, and was just the quintessential, classy Parisian lady.  I wish more than anything that I had tried to strike up a conversation with her

Cream Cheese Banana Nut Bread - Southern Living

***There seriously aren't very many things that smell better than Banana Nut Bread baking in the oven.   Don't you agree?  This recipe for Cream Cheese Banana Nut Bread from Southern Living magazine was one of the very first recipes that I added to this blog...back in November 2007!  In fact, I came across it when I worked for the magazine as a Marketing Intern.  Back then, I didn't have a photo for every recipe, and the blog post was simply the recipe and nothing else.  Because this is my go-to recipe for Banana Nut Bread (and because it is so amazing!), I thought that it deserved a little more attention.  This is quite honestly some of the best Banana Nut Bread that I've ever had.  An entire 8oz. package of cream cheese is added right to the batter, along with 4 mashed bananas.  The cream cheese adds so much to this recipe, with an incredibly moist texture being the main component.  Plus, the roasted pecans are the perfect addition.  Roasting the nuts brings out
